tagliatelle alla bolognese



been gradually getting around to making the classic ragù, alla bolognese, that Mr. Blumenthal chows down in the opening of the episode. made a (halfway decent) mushroom ragù over the weekend, starting with the soffrito and substituting mushrooms for the minced beef.

refettorio in london, with giorgio locatelli's pasta devilry, serves tagliatella with pork ragù which might be worth sampling just to get an idea. i can certainly vouch for their rabbit ragù...
